Synthetic Amino Acids & Cold Process Encapsulation
The two amino acids most important in commercial feed formulations,
lysine and methonine are available in relatively pure form. The
gelation of a few hydrocolloids depends on cations, the potassium
precipitates some carrageenan fractions and the divalent elements
insoluble alginans and low methyl pectin. In fact, pectin has a
particular reactivity. At present, the properties of all the gums
are not known very well. Only some particular reactions are
established for some substances.
A few hydrocolloids
show an affinity for cations and some others react with proteins.
These two properties rule their technological behavior and their
nutritional and physiological consequences. The sulfated
polysaccharides, particularly the carrageenans, react with protein
by two types of chemical reactions, according to the pH of the
medium.
